A Festive Dessert – Sagar’s Chocolate Mousse

We’re back with Recruitment Solvers’ ambassador Sagar Massey this month with a festive delight.
Following a busy period visiting friends and family in India to celebrate Diwali, we’re excited to share below Sagar’s recipe for a delicious Chocolate and Orange Truffle Liqueur Mousse – the perfect dessert this festive season!
Chocolate and Orange Truffle Liqueur Mousse
- 50g Sugar
- 100g Egg Yolks
- 250ml Double Cream
- 250ml Whole Milk
- 1 Gelatine sheets
- 240g Dark Chocolate
- 100ml Orange Truffle liqueur
- Pinch of Nutmeg Powder
Soak the gelatine in ice-cold water for 5 minutes, take it out of the water, squeeze all the water out and set aside.
In a bowl whisk the sugar, nutmeg and egg yolks until pale yellow and airy. Meanwhile bring the milk and cream to a boil, once boiling pour half of that on the egg yolk mixture and mix well.
Now put the egg and milk mixture back in the pan, start heating and keep whisking until it reaches 82°C. Once reached the temperature, mix the orange liqueur and soaked gelatine, pour onto the chocolate and mix it until combined and set in the lined tray or lined moulds.
I usually serve this dessert with fresh raspberries dressed in whisky and raspberries but you can also serve this with orange segments and vanilla ice-cream.
